Crispy dukkah-coated feta adds a flavorful crunch to these delicious vegetarian wraps.
Ingredients:
  • 350g sheep or goat’s feta, drained
  • 20.00 ml plain flour
  • 40.00 ml dukkah
  • 8 mini tortillas
  • 60g mixed salad leaves
  • 2 tomatoes, sliced
  • 4 radishes, thinly sliced
  • 1 small red onion, thinly sliced
  • 125.00 ml fresh basil leaves
  • Basil pesto, to serve
Instructions:
  • Slice the feta into thin 4mm slices. Mix the flour and dukkah on a sheet of baking paper, then season generously with black pepper. Coat each feta slice with the flour mixture.
  • In a frying pan over medium heat, sizzle the feta slices in olive oil until golden and lightly crisp, about 1-2 minutes per side. Drain on paper towel-lined plate.
  • Preheat a sizzling hot chargrill pan. Grill the tortillas for 1-2 minutes on each side until perfectly charred. Keep them warm.
  • Layer crispy tortillas with a vibrant mixture of salad leaves, juicy tomato, crunchy radish, tangy red onion, savory feta cheese, fresh basil, and flavorful pesto.
