Make Greek cheese pies with feta, parmesan, honey in air fryer. Great for parties or dinner with salad. Easy to prep ahead, freeze for 2 months, store leftovers for 2 days.
Ingredients:
  • 200g ricotta, mashed
  • 200g feta, mashed
  • 40g (1/2 cup) finely grated parmesan
  • Pinch nutmeg
  • 1 egg, lightly whisked
  • 2 tsp chopped fresh mint or dill, optional
  • 12 sheets filo pastry
  • 185g butter, melted
  • Honey, to serve
Instructions:
  • Mix together the ricotta, feta, parmesan, nutmeg, and egg in a bowl. Add in the mint or dill, if desired.
  • Lay 1 filo sheet on a clean work surface. Cover the rest of the sheets with a dry and damp tea towel to keep them moist. Cut the filo sheet in half lengthwise, brush lightly with melted butter, fold each piece in half lengthwise, and brush with butter again.
  • Take a tablespoon of filling and place it on one end of each filo piece. Fold the pastry over diagonally to create a triangle shape that encloses the filling. Brush with melted butter and arrange on a tray. Cover with a tea towel and repeat the process to make a total of 24 delicious triangles.
  • Preheat your air fryer to a perfect 190°C for just 5 minutes, then cook the filo parcels in batches as needed for about 7 minutes until they are wonderfully crisp and golden brown. Finish by delicately drizzling them with honey before serving.
