Create a quick, delicious peach and feta salad in minutes!
Ingredients:
  • 100g mixed salad leaves
  • 125.00 ml fresh mint leaves, torn
  • 80g (1/2 cup) crunchy sprout combo
  • 2 peaches, cut into wedges
  • 21.00 gm lemon juice
  • 14.40 gm honey
  • 2 tsp white balsamic vinegar
  • 60ml (1/4 cup) extra virgin olive oil, to shallow fry
  • 40.00 ml plain flour
  • 1 egg
  • 200g feta, cut into 8 slices
Instructions:
  • Place the salad leaves, mint, sprout mix, and peach beautifully on a serving platter. Season with salt and pepper. In a bowl, whisk together extra virgin olive oil, lemon juice, honey, and vinegar until well combined.
  • In a frying pan, warm a generous amount of light extra virgin olive oil over medium-low heat. Spread flour on a plate and whisk the egg in a shallow bowl. Coat half of the feta in flour, then dip in egg. Fry until golden and crispy, about 2 minutes, turning as needed. Drain on paper towel and repeat with the rest of the feta.
  • Top the salad with crumbled feta cheese and generously drizzle with your favorite dressing.
