Delicious veggie fried rice ready in 35 minutes!
Ingredients:
  • 2 cups uncooked quick-cooking brown rice
  • 2 eggs, beaten
  • 1 tablespoon vegetable oil
  • 2 medium carrots, sliced (1 cup)
  • 8 medium green onions, sliced (1/2 cup)
  • 1 clove garlic, finely chopped
  • 2 cups snow (Chinese) pea pods, cut in half
  • 1 cup bean sprouts
  • 2 tablespoons soy sauce
Instructions:
  • Prepare perfect fluffy rice following the instructions on the package.
  • Spray a large nonstick skillet with cooking spray and heat over medium heat. Pour the beaten eggs into the skillet and cook until firm. Remove from skillet and allow to cool before cutting into small pieces.
  • In the same skillet, heat oil over medium-high heat. Sauté carrots, onions, and garlic for 1 minute. Add pea pods and bean sprouts; cook for 2 minutes. Mix in rice and soy sauce, then reduce heat to medium. Cook for 2 minutes, stirring occasionally. Finally, add eggs and cook until heated through.
