Vegetarian tofu fried rice with a spicy Sriracha kick.
Ingredients:
  • 1 tablespoon olive oil
  • 0.5 (12 ounce) package firm tofu, cubed
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 0.25 onion, minced
  • salt and ground black pepper to taste
  • 3 cups cooked white rice
  • 4 large eggs, beaten
  • 1 (8 ounce) package frozen chopped spinach, thawed
  • 1 teaspoon sriracha hot sauce, or to taste
Instructions:
  • In a hot skillet, sauté tofu, carrots, celery, onion, and garlic until veggies are tender, about 5 to 10 minutes. Season generously with salt and pepper.
  • Combine rice, egg, and spinach with tofu mixture, stirring for about 5 minutes until egg is fully cooked. Mix in Sriracha sauce and season with salt and pepper to taste.
