Smoky veg patties

Delicious veggie patties with beans and fried eggs for a comforting, protein-packed meal. Perfect for a midweek treat.
Ingredients:
  • 1 head of broccoli
  • 1 bunch of spring onions
  • 600 g Maris Piper potatoes
  • 1 red pepper
  • red wine vinegar
  • 1 x 400 g tin of cannellini beans
  • 60 g Cheddar cheese
  • ½ teaspoon smoked paprika
  • 4 large eggs
  • 1 x 80 g bag of watercress, spinach & rocket
Instructions:
  • Prepare the vegetables: Trim and chop 1 head of broccoli (375g), including the florets and stalk; slice ½ a bunch of spring onions. Cut 600g of potatoes into 3cm chunks and boil in salted water for 12 minutes, adding broccoli for the last 3 minutes. In a large frying pan, cook spring onions and broccoli stalks in 1 tablespoon of olive oil for 10 minutes. Drain the cooked vegetables and add them to the frying pan. Make salsa by chopping red pepper and spring onions, mixing with red wine vinegar, salt, and pepper. In the frying pan, add cannellini beans, Cheddar cheese, smoked paprika, mash together, shape into 8 patties, and fry until golden. Cook eggs to your preference. Serve 2 patties and an egg on each plate, topped with salsa. Serve with watercress, spinach & rocket tossed in olive oil and red wine vinegar.
