Creamy paneer & veg curry

Try this flavorful and charred paneer and veg curry inspired by tikka masala, perfect for Friday nights. Grilling is key for that smoky taste. Treat it like cooking meat for a special dish.
Ingredients:
  • 1 teaspoon ground turmeric
  • 1 teaspoon cumin seeds
  • 2 red onions
  • 2 mixed-colour peppers
  • 6 mixed-colour fresh chillies
  • ½ a head of cauliflower (400g)
  • 200 g paneer cheese
  • groundnut oil
  • ½ a bunch of fresh curry leaves (15g)
  • 4 cloves of garlic
  • 5 cm piece of ginger
  • 1 heaped teaspoon garam masala
  • 1 heaped teaspoon paprika
  • 50 g whole blanched almonds
  • 1 x 400 g tin of quality plum tomatoes
  • 1 x 400 g tin of chickpeas
  • 1 x 400 g tin of light coconut milk
  • 1 tablespoon mango chutney
  • 2 carrots
  • 1 cucumber
  • ¼ of a red cabbage
  • ¼ of a white cabbage
  • 1 lime
  • ½ a bunch of fresh coriander (15g)
  • 1 mug of self-raising flour
  • 1 tablespoon black mustard seeds
  • 50 g creamed coconut
Instructions:
  • Begin by pouring 1 tablespoon of olive oil onto a large roasting tray. Season with a pinch of sea salt, black pepper, turmeric, and cumin seeds. Grate some lemon zest and squeeze in the juice. Add one quartered onion, torn peppers, whole chillies, cauliflower florets, and 2.5cm cubes of paneer. Mix well and thread onto skewers. Grill for 15 minutes until golden. In a frying pan, heat 1 tablespoon of groundnut oil, fry curry leaves until crispy, then remove. Cook onions, garlic, ginger, garam masala, paprika, and almonds for 5 minutes. Blend with tinned tomatoes for a smooth sauce, then add chickpeas, coconut milk, and mango chutney. Simmer for 10 minutes. For the salad, grate carrots, cucumber, and cabbage, then mix with grated ginger, lime juice, and coriander. Make pancakes by mixing flour, water, mustard seeds, and grated creamed coconut. Cook in a pan until golden. Add paneer and veggies from skewers to the curry, simmer for 10 minutes. Finish with coconut milk and crispy curry leaves. Serve the salad and pancakes alongside the curry. Enjoy your meal!
