Protein-packed vegetarian chili with Beyond Meat, ready in a flash using the Instant Pot.
Ingredients:
  • 2 teaspoons olive oil
  • 1 cup chopped onion
  • 0.5 cup chopped green bell pepper
  • 0.5 cup chopped red bell pepper
  • 2 cloves garlic, minced
  • 1 pound vegetarian ground beef substitute (such as Beyond Meat® Beyond Beef®)
  • 1 (15 ounce) can chili beans
  • 1 (14.5 ounce) can diced tomatoes
  • 2 tablespoons chili powder
Instructions:
  • Heat oil in your Instant Pot on the Sauté setting. Sauté onion and bell peppers until tender, about 3 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Add ground beef substitute, cook until browned and crumbly. Mix in beans, tomatoes, and chili powder. Cancel the Sauté setting.
  • Secure the lid tightly. Choose high pressure as per manufacturer's guidelines and set the timer for 5 minutes. Let the pressure build for 10 to 15 minutes.
  • Carefully release pressure using the quick-release method following the manufacturer's instructions for about 5 minutes. Unlock and remove the lid before serving immediately.
