Whip up a speedy vegetarian fried rice packed with savory flavors using eggs for a satisfying meal in minutes.
Ingredients:
  • 3 eggs
  • 2 green shallots
  • 100g snow peas
  • 1 small fresh red chilli (optional)
  • 18.20 gm peanut oil
  • 2 x 250g packet microwave Uncle Ben’s Rice Medley
  • 1 bunch broccolini
  • 150g (1 cup) frozen baby peas
  • 145g (1 cup) roasted cashews
  • 40.00 ml bought teriyaki marinade
  • 57.20 gm honey
  • Black sesame seeds, to sprinkle
Instructions:
  • Preheat a wok or large frying pan over high heat.
  • Whisk eggs in a jug, season well, and prepare shallots, snow peas, and chili as indicated.
  • Warm up the oil in the pan until shimmering. Add the egg and swirl to evenly cover the pan in a thin layer. Cook for about 2 minutes, or until the bottom is golden and set.
  • As the omelette cooks, microwave one packet of rice according to package directions. Repeat with the second packet.
  • Transfer the omelette out of the pan and gently shred it.
  • Toss broccolini and snow peas in the pan, stir-frying until vibrant and crisp-tender, about 2 minutes. Set aside. Stir-fry shallot, peas, cashews, and rice until combined, about 1 minute. Mix in teriyaki marinade and honey until the rice is well coated. Serve topped with broccolini, snow peas, omelette, sesame seeds, and optional chili.
