Elevate Japanese fried rice with flavorful teriyaki beef skewers.
Ingredients:
  • 14.40 gm honey
  • 42.00 gm salt-reduced soy sauce
  • 20.00 ml mirin
  • 1 tsp sesame oil
  • 2 garlic cloves, crushed
  • 600g thick piece beef rump steak, trimmed, thinly sliced into long strips
  • 18.40 gm canola oil
  • 1 red capsicum, finely chopped
  • 2cm piece fresh ginger, peeled, finely grated
  • 2 green onions, thinly sliced, plus extra to serve
  • 150g snow peas, trimmed, thinly sliced
  • 450g packet 90-second microwave brown rice or 3 cups cold cooked brown rice
  • 50g baby spinach
  • Lemon wedges, to serve
Instructions:
  • In a glass or ceramic bowl, mix together honey, soy sauce, mirin, sesame oil, and half of the garlic. Add the beef and coat it well. Cover and refrigerate for 1 hour.
  • Remove beef from the marinade, making sure to save the marinade. Skewer the beef onto 8 skewers.
  • Preheat a greased barbecue grill or chargrill pan over medium-high heat. Grill skewers for 3 minutes on each side for medium, brushing with marinade halfway through, until cooked to your desired doneness.
  • Preheat a wok over high heat, then add canola oil and swirl to coat. Stir-fry capsicum for 2 minutes. Add ginger, onion, snow peas, and remaining garlic, stir-fry for 1 minute. Add rice and stir-fry for 2 minutes until heated through. Finally, add spinach and stir-fry for 1 minute until just wilted.
  • Present the skewers alongside flavorful fried rice, garnished with an extra sprinkle of green onion and served with zesty lemon wedges.
