Quick and flavorful vegetarian fried rice for a satisfying dinner.
Ingredients:
  • 9.20 gm extra virgin olive oil
  • 2 eggs, lightly whisked
  • 300g Nature's Kitchen Firm Tofu, cut into 1.5 pieces
  • 1 red onion, cut into thin wedges
  • 2 garlic cloves, crushed
  • 1 long fresh red chilli, finely chopped
  • 2 bunches broccolini, cut into 4cm lengths
  • 2 carrots, peeled, cut into matchsticks
  • 75g Chopped Kale
  • 31.50 gm salt-reduced gluten-free soy sauce
  • 21.00 gm fresh lime juice
  • 7.20 gm honey
  • 250g pkt microwave brown rice and quinoa, warmed
Instructions:
  • In a large non-stick wok over high heat, heat 1/2 tsp oil. Add egg and swirl the wok to create a delicate omelette. Allow it to cook for about 1 minute until it sets. Take the omelette out of the pan, roll it up, and slice into portions.
  • Heat the wok on high heat, then add 1 tsp of remaining oil and the tofu. Stir-fry for 2 minutes until golden, then set aside.
  • Heat the rest of the oil in a wok until it shimmers. Stir-fry the onion for 1 minute. Introduce the garlic and chili, stirring for 30 seconds. Toss in the broccolini and carrot along with 2 tablespoons of water. Stir-fry for 2 minutes until they are nearly cooked. Finally, mix in the kale and stir-fry for an additional minute.
  • In a small bowl, mix together soy sauce, lime juice, and honey. Pour the mixture into a wok with rice and quinoa. Stir-fry for 1 minute until heated through. Serve the fried rice in bowls, topped with omelette rolls and lime wedges.
