Quick and easy 5-ingredient Chinese-style fried rice with chili jam for heat, sweetness, and sharpness. Silken tofu adds protein and deliciousness. Ready in just 10 minutes!
Ingredients:
  • 6 spring onions
  • 1 x 250 g sachet of cooked brown basmati rice
  • 2 heaped teaspoons chilli jam
  • 2 large free-range eggs
  • 150 g firm silken tofu
Instructions:
  • Preheat a large non-stick frying pan over medium-high heat. Finely slice the spring onions and sauté them with 1 tablespoon of olive oil for 1 minute. Mix in the rice, chilli jam, a splash of water, and a pinch of sea salt and black pepper, tossing for 2 minutes until well coated. Create a well in the middle of the pan and crack the eggs into it. Gently scramble the eggs to create large curds. Add the tofu and fold everything together until combined. Adjust seasoning to taste. Lightly grease a bowl, pack the stir-fried rice into it, then confidently invert onto a plate.
