Versatile tofu and vegetable fried rice, customize with any veggies or protein of choice.
Ingredients:
  • 0.5 cup tofu
  • 3 tablespoons soy sauce, divided, or to taste
  • 2 tablespoons vegetable oil
  • 0.5 onion, finely chopped
  • 1 carrot, peeled and finely chopped
  • 2.5 cups cooked rice, or to taste
  • 3 eggs
  • 1 tomato, chopped
  • salt to taste
  • ground white pepper to taste
Instructions:
  • Marinate tofu in a bowl with 2 tablespoons of soy sauce while you prep the remaining ingredients.
  • In a skillet over medium heat, sizzle onions and carrots until lightly browned, for about 5 minutes. Add tofu with marinade, cook for 2 to 3 minutes, stirring occasionally. Mix in rice and continue cooking for 3 more minutes, stirring constantly.
  • Arrange all ingredients on one side of the skillet, creating a clear space on the other side. Crack eggs into the empty side and cook for 2 minutes until they begin to set. Combine eggs with the rest of the ingredients, ensuring everything is well mixed. Season with remaining soy sauce and sugar, mixing thoroughly.
  • Add tomatoes to the skillet and sauté for 1 minute, then season with salt, white pepper, and additional soy sauce to taste.
