Transform tofu fried rice into a versatile, veggie-loaded dish perfect for vegetarians or meat lovers alike.
Ingredients:
  • 4 cups water
  • 2 cups uncooked white rice
  • 2 tablespoons olive oil, divided
  • 1 (12 ounce) package extra-firm tofu, chopped
  • 1 tablespoon butter
  • 1 large egg, beaten
  • 1 bunch green onions, chopped
  • 1 cup frozen peas
  • 1 medium carrot, shredded
  • 2 tablespoons soy sauce
Instructions:
  • In a saucepan, bring water and rice to a boil. Cover, reduce heat to medium-low, and simmer for 20 to 25 minutes until the rice is tender and water is absorbed. Set aside off the heat.
  • In a saucepan over medium heat, saute tofu in 1 tablespoon of olive oil until golden brown, about 10 to 15 minutes.
  • As the tofu simmers, melt butter in a saucepan over gentle heat. Add the beaten egg to the pan and cook until it forms into a uniform layer, approximately 5 minutes. Use a spatula to dice the cooked egg into small bits and then set it aside.
  • Heat 1 tablespoon olive oil in a large saucepan over medium heat. Stir in rice, green onions, peas, and carrot. Cook and stir for 3 minutes. Add soy sauce, tofu, and egg. Cook until heated through, about 2 minutes.
