Caramelised pineapple with ginger & cinnamon cream

Elevate summer desserts with rum and ginger infused pan-fried pineapple.
Ingredients:
  • 250ml (1 cup) thickened cream
  • Large pinch of ground cinnamon
  • 40g butter
  • 5cm-piece fresh ginger, peeled, finely grated
  • 32.00 gm brown sugar
  • 1 pineapple, peeled, cored, thinly sliced
  • 40.00 ml white rum
Instructions:
  • Whip the cream and cinnamon in a bowl with an electric beater until stiff peaks form.
  • Melt half of the butter in a large non-stick frying pan over medium-high heat, then combine with half of the ginger and half of the sugar, stirring to incorporate.
  • Add a generous portion of pineapple slices. Sear for 3 minutes on each side until beautifully golden. Pour in half of the rum and let it simmer for 1 minute. Serve the caramelized pineapple on individual plates.
  • Continue the process with the remaining butter, ginger, sugar, pineapple, and rum. Finish by adding the cinnamon cream on top.
