Caramelized pineapple with macadamia and sorbet - a quick and sweet tropical treat. Ready in just 10 minutes!
Ingredients:
  • 82.50 ml macadamia halves
  • 40.00 ml roasted coconut chips
  • 2/3 small pineapple, peeled, thinly sliced crossways into 12 rounds (see Notes)
  • 45.00 gm brown sugar
  • 4 large scoops lychee and passionfruit sorbet
Instructions:
  • 1. Preheat your oven to 200C/220C fan-forced. 2. Place the macadamia halves in a small roasting pan and roast for 4 minutes or until golden. 3. Transfer the roasted macadamia halves to a bowl and mix in the coconut until well combined.
  • Preheat a large chargrill pan over medium-high heat while sprinkling pineapple slices with sugar. Cook each side for 2 minutes until lightly charred and caramelized.
  • Distribute the pineapple onto serving plates, add a scoop of sorbet on top of each, sprinkle with the macadamia mixture, and serve.
