Refreshing and light dessert that's surprisingly simple and low-fat.
Ingredients:
  • 1 x 750g pkt whole peeled pineapple, cut crossways into 8 slices
  • 3 x 145ml packs 99 per cent fat-free mango ripple ice-cream (Weight Watchers brand)
Instructions:
  • - Preheat the grill to high heat. - Spread the sugar on a plate. - Gently coat the pineapple slices with the sugar. - Arrange the sugared pineapple slices on a baking tray. - Grill the pineapple slices under the high heat for 2 minutes on each side, ensuring they caramelize to perfection.
  • Enjoy caramelized pineapple topped with luscious scoops of ice cream.
