Caramelised pineapple with passionfruit ice cream

Caramelised pineapple paired with fruity sorbet creates a mouthwatering moment.
Ingredients:
  • 60g butter
  • 59.40 gm brown sugar
  • 1kg Pineapple, peeled, halved lengthways, cut into 1cm thick slices
  • Weis Frozen Fruit passionfruit or lychee dairy dessert, to serve
Instructions:
  • In a large frying pan over medium heat, melt 60g of butter. Add 1/3 cup of brown sugar and stir continuously until combined and the sugar has melted.
  • Cook 1kg of naturally sweet pineapple, peeled, halved lengthways, and cut into 1cm thick slices. Turn occasionally and cook for 8-10 minutes until golden, the sauce slightly thickens, and caramelizes.
  • Top with refreshing Weis Frozen Fruit passionfruit or lychee dairy dessert before serving.
