Revive leftover brown rice in a vibrant dish of chicken fried rice with colorful peppers and onions. Season with your choice of black pepper, paprika, or dried parsley post-cooking for added flavor.
Ingredients:
  • 2 tablespoons vegetable oil, divided
  • 8 ounces skinless, boneless chicken breast, cut into strips
  • 0.5 red bell pepper, chopped
  • 0.5 cup green onion, chopped
  • 4 cloves garlic, minced
  • 3 cups cooked brown rice
  • 2 tablespoons light soy sauce
  • 1 tablespoon rice vinegar
  • 1 cup frozen peas, thawed
Instructions:
  • In a large skillet over medium heat, warm 1 tablespoon of vegetable oil. Add chicken, bell pepper, green onion, and garlic. Cook and stir until chicken is fully cooked, approximately 5 minutes. Transfer chicken to a plate and keep it warm.
  • In the same skillet over medium-high heat, warm the remaining tablespoon of oil. Add the rice and cook while stirring until heated through. Mix in the soy sauce, rice vinegar, and peas, and cook for 1 more minute. Add the chicken mixture back to the skillet, blend it with the rice, and heat everything before serving.
