Garlic-infused stir-fried chicken, simmered in Chinese wine and stock until tender.
Ingredients:
  • 1.5 pounds skinless, boneless chicken breasts, cut into bite-size pieces
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 tablespoons peanut oil
  • 15 cloves garlic, peeled
  • 3 tablespoons Shao-Hsing cooking wine or dry sherry
  • 2 tablespoons light soy sauce
  • 1.3333333730698 cups chicken stock
Instructions:
  • Coat chicken with a savory blend of salt, black pepper, and flour.
  • In a hot wok or large skillet, let the peanut oil smoke slightly. Add chicken and stir fry until lightly browned, about 3 to 5 minutes. Reduce heat to medium, add whole garlic cloves, and continue stir frying for 5 minutes.
  • Reduce heat to low, then pour in Shao-Hsing wine, soy sauce, and chicken stock. Cover and simmer for 20 minutes until the chicken is tender. Remember to discard garlic cloves before serving.
