Spicy-sweet chili garlic grilled chicken thighs, perfect with fluffy white rice.
Ingredients:
  • 3 tablespoons olive oil
  • 2 tablespoons chili garlic, sauce such as Huy Fong
  • 1 tablespoon honey
  • 1 tablespoon rice wine vinegar
  • 2 cloves garlic minced
  • 1 (3-pound) chicken, cut into pieces, or the equivalent in chicken pieces
  • Thinly sliced scallions, for garnish
  • Sesame seeds, for garnish
Instructions:
  • Combine olive oil, chili garlic sauce, honey, rice wine vinegar, and minced garlic in a bowl. Add chicken, cover, and refrigerate for at least 30 minutes or overnight.
  • Preheat grill to medium-high heat (about 400°F) with direct and indirect cooking zones. Use tongs to oil grill grates with an oil-dipped paper towel.
  • Grill the chicken: Start by placing the chicken skin-side down on the hot grill to achieve dark grilled marks, about 5 minutes. For crosshatched lines, rotate the chicken halfway through. Flip the chicken and cook for another 4 to 5 minutes. Move the chicken to the cooler part of the grill to prevent overcooking and cook until the internal temperature reaches 165°F, around 10 to 15 minutes. Keep an eye on the chicken's progress and adjust as needed based on your grill type and temperature.
  • Once the chicken is fully cooked on the grill, set it aside to rest briefly. Finish by topping it with diced scallions and roasted sesame seeds before serving warm.
