Ingredients:
  • 1/2 Chinese cabbage
  • 1/2 red cabbage
  • 1 bunch fresh coriander, washed
  • 8 shallots, cut diagonally into strips
  • 100g packet fried noodles
  • 4cm piece fresh ginger
  • 56.88 gm olive oil
  • 20.00 ml sesame oil
  • 42.00 gm soy sauce
  • 62.50 ml white vinegar
  • Black pepper, to taste
Instructions:
  • Slice cabbage thinly, rinse under cold water in a colander, drain well. Finely chop coriander roots and stems, set aside. Pluck coriander leaves.
  • Combine the drained cabbage with fresh coriander leaves and shallots in a large serving dish. Toss everything together to mix well. Cover the dish tightly with plastic wrap and refrigerate until serving.
  • Prepare the dressing by finely chopping ginger. Mix together the coriander roots, ginger, oils, soy sauce, vinegar, and pepper in a screw-top jar. Shake the jar until the ingredients are thoroughly combined. Chill the dressing in the refrigerator until ready to use.
  • When ready to serve, drizzle the dressing over the cabbage and mix well. Sprinkle the fried noodles on top right before serving to add a delightful crunch.
