Leftover chicken noodle salad

Revive leftover chicken into a flavorful Asian salad masterpiece.
Ingredients:
  • 440g hokkien noodles
  • 100g snow peas, trimmed, thickly sliced
  • 250g baby roma tomatoes, quartered
  • 80g mixed lettuce leaves
  • 3 green onions, sliced
  • 500.00 ml shredded cooked chicken
  • 500.00 ml shredded red cabbage
  • 66.25 gm honey soy salad dressing
Instructions:
  • Add the noodles and snow peas to a heatproof bowl and pour boiling water over them. Let it sit for 3 minutes to soften. Then, use a fork to separate the noodles. Drain, rinse under cold water, and transfer to a bowl.
  • Combine tomato, lettuce, onion, chicken, and cabbage in a bowl. Drizzle with dressing and gently toss to mix. Serve.
