Irresistible Asian chicken salad with crispy lettuce, tender chicken, fried rice noodles, and sweet tangy dressing.
Ingredients:
  • 0.25 cup vegetable oil
  • 3 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 2 teaspoons soy sauce
  • 1 head iceberg lettuce - rinsed, dried, and chopped
  • 4 boneless chicken breast halves, cooked and shredded
  • 3 green onions, chopped
  • 1 tablespoon sesame seeds, toasted
  • 1.5 tablespoons olive oil, or as needed
  • 1 (8 ounce) package dried rice noodles
Instructions:
  • Prepare all your fresh, high-quality ingredients.
  • Prepare the dressing: Combine oil, vinegar, brown sugar, sesame oil, and soy sauce in a small container with a lid. Allow the flavors to meld while you prepare the salad.
  • Prepare the salad by tossing together lettuce, chicken, green onions, and sesame seeds in a spacious bowl. Refrigerate and let it chill for 10 minutes.
  • As the salad chills, warm oil in a skillet over medium-low heat. Crumble rice noodles and fry in batches in the skillet until they puff up, about 15 to 25 seconds each. Drain on a paper towel-lined plate.
  • Take the chilled salad out of the refrigerator, divide it into individual salad bowls, sprinkle with crispy fried rice noodles, and generously drizzle dressing over them.
