Effortlessly whip up an Asian-inspired cabbage, spinach, and chicken salad with a versatile stir-fry sauce doubling as dressing.
Ingredients:
  • 1 lb uncooked chicken breast strips for stir-frying
  • 3/4 cup Oriental dressing and marinade
  • 2 teaspoons vegetable oil
  • 3 cups thinly sliced Chinese (napa) cabbage
  • 3 cups fresh baby spinach leaves
  • 1/4 cup sliced green onions (4 medium)
  • 2 tablespoons coarsely chopped dry-roasted peanuts
Instructions:
  • Combine the chicken and 1/4 cup of the dressing in a medium bowl, ensuring the chicken is evenly coated. Allow it to marinate at room temperature for 10 minutes.
  • Heat oil in a nonstick skillet until hot. Transfer chicken from marinade to skillet using a slotted spoon; discard extra marinade. Cook chicken for 4 to 6 minutes until fully cooked and browned. Remove from heat and stir in remaining dressing.
  • Distribute cabbage and spinach evenly onto 4 plates. Spoon chicken mixture on top. Garnish with onions and peanuts. Serve with extra dressing on the side, if desired.
