Make quick and tasty coconut rice using jasmine rice, coconut milk, sugar, and salt for a flavorful side dish in 30 minutes.
Ingredients:
  • 1.5 cups uncooked jasmine rice
  • 1 (14 ounce) can coconut milk
  • 1.25 cups water
  • 1 teaspoon sugar
  • 1 teaspoon unrefined coconut oil
Instructions:
  • Rinse rice in a fine mesh strainer under cold water, using your fingers to stir and remove excess starch, until water runs clear; should take about 1 minute.
  • Combine rinsed rice, creamy coconut milk, water, sugar, and a pinch of salt in a saucepan, stirring until the sugar dissolves completely, approximately 1 minute.
  • In a saucepan, bring the mixture to a boil over medium heat. Cover, lower the heat to simmer undisturbed for 11 minutes. Turn off the heat and let it steam, covered, until rice is tender and liquid is absorbed, about 10 minutes. Uncover and gently stir in coconut oil before serving.
