Asian Pot Roast

Impress your loved ones with a flavorful Asian twist on classic beef pot roast.
Ingredients:
  • 1 beef arm or chuck roast (3 lb)
  • 1 large onion, sliced
  • 1 can (15 1/4 oz) pineapple chunks in juice, drained, juice reserved
  • 3 tablespoons reduced-sodium soy sauce
  • 1 teaspoon ground ginger
  • 1 clove garlic, crushed
  • 2 medium stalks celery, sliced (1 cup)
  • 1 package (10 oz) frozen spinach leaves, thawed, drained
  • 1 can (4 oz) mushroom pieces and stems, drained
Instructions:
  • Trim any excess fat off the beef. Heat a nonstick Dutch oven over medium heat. Brown the beef on all sides in the Dutch oven, then drain any excess fat. Place the onion on top of the beef.
  • Combine the reserved pineapple juice, soy sauce, ginger, and garlic in a small bowl. Pour this flavorful mixture over the beef. Bring to a boil, then lower the heat, cover, and simmer for approximately 2 hours until the meat is tender.
  • Toss in some celery. Let it simmer covered for 20 minutes. Toss in pineapple, spinach, and mushrooms. Cover and let it simmer for an additional 5 minutes. Take out the beef, pineapple, and veggies. Remove any fat from the broth. Serve the broth with the beef, pineapple, and veggies.
