Tender slow cooker pot roast with sweet-sour sauce of brown sugar, tomato sauce, and vinegar. A new favorite!
Ingredients:
  • 6 small white potatoes, peeled
  • 12 carrots, chopped
  • 1 cup chopped onion
  • 1 tablespoon canola oil
  • 1 (3 pound) boneless beef chuck roast
  • 1 (15 ounce) can tomato sauce
  • 0.25 cup packed brown sugar
  • 2 tablespoons Worcestershire sauce, or more to taste
  • 2 tablespoons cider vinegar
  • 1 teaspoon salt
Instructions:
  • Place a delightful medley of potatoes, carrots, and onion at the base of a slow cooker.
  • In a large skillet over medium-high heat, sear the beef roast in canola oil until golden brown on all sides, about 2 to 3 minutes per side. Place the seared beef on top of the vegetables.
  • Combine tomato sauce, brown sugar, Worcestershire sauce, cider vinegar, and salt in a bowl, then drizzle over the roast.
  • Slow cook for 10 to 12 hours on low heat setting, or 5 to 6 hours on high heat setting.
  • Transfer the roast and vegetables to a beautiful serving platter. In a skillet, simmer the sauce over medium-high heat until it thickens (5 to 10 minutes). Pour the sauce over the beef and veggies before serving.
