Tender sweet and sour chicken with pineapple and bell pepper slow cooked to perfection.
Ingredients:
  • 4 tablespoons cornstarch, divided
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon ground ginger
  • 1.5 pounds skinless, boneless chicken thighs, cubed
  • 1 tablespoon vegetable oil
  • 1 (20 ounce) can pineapple chunks in juice
  • 0.5 cup chicken stock
  • 0.25 cup rice vinegar
  • 0.25 cup brown sugar
  • 2 tablespoons ketchup
  • 2 tablespoons soy sauce
  • 1 medium red bell pepper, seeded and chopped
  • 1 green onion, chopped
Instructions:
  • In a medium bowl, combine 2 tablespoons of cornstarch with garlic powder and ground ginger. Coat chicken thighs evenly with the cornstarch mixture.
  • In a large skillet over medium-high heat, brown the chicken in hot oil by cooking and stirring for about 3 minutes on each side. Transfer the chicken to a plate and set it aside.
  • Pour the juicy goodness from the pineapple can into a measuring cup, aiming for about 3/4 to 1 cup of liquid.
  • Combine 1/2 cup pineapple juice, chicken stock, rice vinegar, brown sugar, ketchup, and soy sauce in a slow cooker until the sauce is thoroughly mixed. Add browned chicken and stir until well coated.
  • Simmer gently for 3.5 hours.
  • Combine the remaining 1/4 cup of pineapple juice with the remaining 2 tablespoons of cornstarch in a small bowl until smooth. Pour this mixture into the slow cooker, set the heat to High, and then add the pineapple and bell pepper.
  • Simmer over High heat until the sauce bubbles and thickens and the bell pepper is still crisp-tender, approximately 30 minutes. Top with green onion before serving.
