Slow cooker sweet and sour chicken with deliciously sweet brown sugar and pineapple.
Ingredients:
  • 1 tablespoon olive oil
  • 6 (5 ounce) bone-in chicken thighs
  • 1 cup dark brown sugar
  • 4 tablespoons reduced-sodium soy sauce
  • 3 tablespoons honey
  • 3 cloves garlic, minced
  • 0.5 tablespoon ground ginger
  • 2 cups pineapple chunks
  • 1 medium white onion, cut into large chunks
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 (8 ounce) package frozen sugar snap peas
Instructions:
  • In a skillet over medium-high heat, sear the chicken in hot oil for 2 1/2 minutes on each side until golden brown.
  • Combine brown sugar, soy sauce, honey, garlic, and ginger in a small bowl as the chicken cooks.
  • Place the chicken at the bottom of the slow cooker, followed by the pineapple and onion. Then, pour the sauce over everything.
  • Cook on High, covered, for 3 hours.
  • Heat your oven to a sizzling 500 degrees F (260 degrees C).
  • Transfer the chicken from the slow cooker to a baking sheet.
  • Roast chicken in the oven until fully cooked, about 15 minutes, ensuring the juices run clear and internal temperature reaches 165°F (74°C) near the bone.
  • Mix together cornstarch and water in a small bowl, then incorporate the mixture into the slow cooker. Simmer until the sauce thickens, approximately 30 minutes. Finally, toss in snap peas and chicken, and continue cooking until heated through, about 15 to 20 minutes.
