Asian roasted chicken legs

Whip up a delicious and easy Asian chicken dish with just a few basic ingredients for a quick dinner option.
Ingredients:
  • 80ml (1/3 cup) hoisin sauce
  • 53.60 gm golden syrup
  • 18.20 gm peanut oil
  • 8 medium (about 125g each) chicken drumsticks
  • 315g (1 1/2 cups) white long-grain rice
  • 120g baby spinach leaves, washed, dried
Instructions:
  • In a large shallow dish, mix the hoisin sauce, golden syrup, and oil. Score each chicken drumstick with two 4cm diagonal slits using a sharp knife. Coat the drumsticks in the marinade and refrigerate for at least 15 minutes (or longer for more flavor).
  • Preheat your oven to 200°C. Line a baking tray with non-stick baking paper. Arrange the chicken on the tray and bake for 30 minutes, basting with the marinade every 10 minutes and flipping halfway through, until the chicken is golden and fully cooked.
  • Cook the rice in a large saucepan using the absorption method according to the packet instructions until tender.
  • Arrange the spinach on individual plates and place the chicken on top. Serve with a side of rice.
