Delicious Asian-inspired appetizer or meal using versatile ingredients like corn and leftover salmon. A guaranteed crowd favorite with bold flavors.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame oil
  • 2 cloves garlic, chopped
  • 1 green onion, chopped
  • 1 tablespoon miso paste
  • 1 cup heavy cream
  • 0.25 cup sake
  • 0.25 cup fresh lime juice
  • 1.5 cups dry bread crumbs
  • 1 (7 ounce) can salmon, drained and flaked
  • 0.33333334326744 cup chopped onion
  • 0.25 cup chopped fresh cilantro
  • 1 egg
  • 1 tablespoon soy sauce
  • 1 tablespoon water
  • 2 tablespoons vegetable oil
Instructions:
  • In a large skillet over medium heat, combine vegetable oil and sesame oil. Sauté green onion and garlic until tender. Blend in miso paste and sake until combined, then bring to a simmer. Stir in cream and lime juice, and simmer until thickened, for about 7 minutes. Remove from heat and set aside.
  • Combine bread crumbs, salmon, onion, and cilantro in a medium bowl. In a separate small bowl, whisk together the egg, soy sauce, and water using a fork. Gradually mix in about half of the egg mixture into the salmon mixture. Add more if needed until the mixture molds easily into patties.
  • 1. In a large skillet over medium-high heat, heat the oil. Shape the salmon mixture into 2-inch patties for appetizers or 4-inch patties for a main dish. Cook patties for approximately 4 minutes on each side until they are golden brown. Drizzle sauce over the patties when serving, or serve it on the side for dipping.
