Create a delicious asparagus, ham, and cheese tart using Christmas leftovers.
Ingredients:
  • 2 frozen puff pastry sheets, thawed
  • 30g unsalted butter
  • 9.20 gm olive oil, plus extra to drizzle
  • 150g sliced ham
  • 250g mascarpone cheese
  • 2 bunches asparagus, trimmed, halved
  • 1 egg, lightly beaten
  • 62.50 ml shaved parmesan
Instructions:
  • Preheat oven to 180°C and line 2 trays with baking paper. Cut each pastry sheet into 4 squares, then gently score a 2.5cm border around the edges of each square without cutting through. Place the squares on the trays and chill as you make the filling.
  • Combine butter and oil in a frypan over medium heat. Saute onion for 2-3 minutes until soft. Let it cool slightly. Process ham until finely chopped. Add onion, mustard, and mascarpone, then pulse briefly to mix. Season with salt and pepper to taste.
  • 1. Arrange the mixture inside the edges of each pastry square, place asparagus pieces on top alternating tips and ends. Drizzle with oil, sprinkle with salt and pepper. Brush egg onto pastry borders, and bake tarts for 20-25 minutes until golden and asparagus is tender. Finish with Parmesan and serve with rocket salad if desired.
