Grill up these quick and delicious skewers for a mouthwatering BBQ experience.
Ingredients:
  • 250g ham steaks, cut into 3cm x 1.5cm pieces
  • 1 bunch asparagus, cut into 3cm pieces
  • 175g haloumi, cut into 3cm x 1.5cm pieces
  • 75.08 gm olive oil
  • 65.63 gm lemon juice
  • 11.80 gm dijon mustard
  • 40.00 ml finely chopped fresh oregano leaves
  • 250.00 ml couscous
  • 250.00 gm boiling water
  • 1/2 small red onion, thinly sliced
  • 50g baby spinach
Instructions:
  • Skewer ham, asparagus, and haloumi onto 12 skewers. Arrange in a spacious glass or ceramic dish. Mix oil, lemon juice, mustard, and oregano in a jug. Pour half of the oil mixture over the skewers, ensuring they are well-coated. Cover with plastic wrap and chill in the fridge for 10 minutes.
  • While the couscous is waiting, place it in a heatproof bowl and pour in boiling water. Cover and let it stand for 5 minutes. Then, fluff it up with a fork to separate the grains and mix in the onion, spinach, and the rest of the oil mixture. Toss everything together to combine.
  • Preheat a greased barbecue plate or chargrill over medium-high heat. Grill skewers, turning occasionally, for 5 to 6 minutes or until asparagus is tender. Serve with couscous mixture and lemon wedges.
