Cheesy frittata: A delicious, filling lunch/brunch option perfect with a side salad for a quick and satisfying meal.
Ingredients:
  • 6 free range eggs
  • 500.00 ml leftover cooked vegetables, such as pumpkin, cauliflower or broccoli
  • 500.00 ml ham, chopped
  • 4 spring onions, chopped,
  • 1 spring onion, shredded, to serve
  • 180g haloumi, chopped
  • 125.00 ml coriander leaves, to serve
Instructions:
  • Whisk eggs and cream gently in a large bowl. Coat a 22cm frying pan with oil and heat over medium heat. Cook vegetables, ham, and onion for 2-3 mins, stirring continuously until lightly browned.
  • First, heat the grill to high. Next, pour the egg mixture over the ham and vegetables. Reduce the heat to low and cook for about 5 minutes until the frittata is set around the edges but slightly runny in the center. Finally, place the pan under the grill for 2-3 minutes until it turns golden brown and sets.
  • Heat a small non-stick frying pan on high until hot. Cook haloumi for 1-2 minutes on each side until it is crisp and golden. Slide the frittata out of the pan and top with the cooked haloumi, extra onion, and coriander. Cut into wedges and serve.
