Veggie-packed fritters - perfect for lunch boxes!
Ingredients:
  • 1 small carrot, grated
  • 1 small zucchini, grated
  • 62.50 ml frozen corn kernels
  • 20.00 ml chopped fresh flat-leaf parsley leaves
  • 82.50 ml grated reduced-fat cheddar cheese
  • 50g shaved ham, chopped
  • 2 eggs, lightly beaten
  • 125.00 ml plain flour
  • 13.80 gm vegetable oil
Instructions:
  • Mix together the carrot, zucchini, corn, parsley, cheese, ham, eggs, and flour in a bowl.
  • Heat oil in a frying pan over medium heat. Add carrot mixture in 1/4 cup portions, flatten slightly with a spatula. Cook each fritter for 2 minutes on each side until golden and cooked through. Transfer to a plate lined with paper towel. Repeat process with the remaining oil and carrot mixture to make a total of 8 fritters. Cool, then refrigerate in airtight containers or snap-lock bags. Serve when ready.
