Savor a delicious ham, vegetable, and cheese frittata for a satisfying dinner option.
Ingredients:
  • 1 tablespoon butter or margarine
  • 1/2 cup thinly sliced red bell pepper
  • 1/2 cup thinly sliced onion
  • 1/2 cup chopped zucchini
  • 1 cup chopped cooked ham
  • 4 eggs
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • Dash of pepper
  • 1 medium roma (plum) tomato, sliced
  • 1/4 cup shredded Italian-style cheese blend (1 oz)
  • 1 tablespoon sliced fresh basil leaves, if desired
Instructions:
  • Heat butter in a large nonstick skillet and sauté bell pepper, onion, zucchini, and ham over medium heat for 3 to 4 minutes, stirring occasionally, until vegetables are crisp-tender and ham is starting to brown.
  • In a small bowl, whisk together eggs, milk, salt, and pepper until fully combined.
  • Gently pour the egg mixture over the ham in the pan. Cook on medium heat for 6 to 8 minutes, stirring occasionally, until the eggs are nearly cooked. Lower the heat, arrange tomato slices and cheese on top, cover, and cook for 2 to 3 minutes until the cheese is melted and the eggs are fully set. Finish by sprinkling with fresh basil and cutting into wedges before serving.
