Ham, egg and haloumi breakfast mugs recipe

Quick and delicious breakfast ready in 10 minutes.
Ingredients:
  • 4 large slices triple smoked ham
  • 4 brioche sliders
  • 40g baby spinach
  • 20.00 gm basil pesto
  • 100g (1 cup) coarsely grated haloumi
  • 4 eggs
  • 4 cherry tomatoes, halved
  • Finely chopped fresh continental parsley, to serve
Instructions:
  • Take a slice of ham and line the inside of four 375ml (11⁄2 cup) microwave-safe mugs. Add a slider to the base of each mug, then divide the spinach evenly among them. Top each mug with pesto and spoon 2 tbsp of haloumi into each one.
  • In each mug, crack one egg and add 2 cherry tomato halves, cut-side up. Sprinkle with remaining haloumi. Cover each mug with a piece of paper towel. Microwave two mugs at a time on High for 2 minutes and 15 seconds until egg whites are just set. Repeat with the rest of the mugs.
  • Discard paper towel and garnish with fresh parsley before serving.
