Impress your breakfast guests with delicious ham and egg crepes.
Ingredients:
  • 40g butter
  • 150g mushrooms, sliced
  • 80.80 gm thick cream
  • 100g diced ham
  • 2 hard-boiled eggs, chopped
  • 150g gruyere cheese
  • 1 egg
  • 150ml milk
  • 75g plain flour
  • Melted butter, to brush
Instructions:
  • For crepes, combine egg, milk, and flour in a food processor until smooth. Let the batter rest for 15 minutes. Heat a crepe pan, brush with butter, pour a thin layer of batter, cook until golden on both sides. Stack crepes between baking paper and wrap in foil. Repeat to make 12 crepes.
  • In a frypan over medium heat, melt half of the butter. Add mushrooms and cook for 5 minutes. Mix in cream, ham, egg, cheese, and season with salt and pepper.
  • Preheat your oven to 160°C. Spread 1-2 tablespoons of filling onto each crepe, fold in half, then quarters. Arrange crepes on a greased baking tray. Melt the remaining butter and drizzle over the top. Bake for 5 minutes or until heated. Serve hot.
