Kids will devour these delicious breakfast muffins loaded with ham, eggs, and gooey cheese.
Ingredients:
  • Canola oil spray
  • 4 wholegrain (English) muffins, halved and toasted
  • 120g shaved leg ham
  • 4 slices reduced-fat tasty cheese
Instructions:
  • Prepare a frying pan with a light coating of oil and heat over medium heat. Cook the ham, turning occasionally, until it reaches a light golden color, about 2 to 3 minutes. Transfer the ham to a plate and cover to keep warm.
  • Preheat grill to medium heat, then lightly spray pan with oil. Cook eggs for 4 minutes until they reach your desired doneness.
  • On a foil-lined baking tray, arrange 4 muffin halves. Place an egg on each muffin. Top with ham and a slice of cheese. Grill for 1 minute until the cheese is melted. Finish by topping with the remaining muffin halves and serve.
