Elevate wholemeal muffins with a delicious ham, cheese, and herb omelette topping.
Ingredients:
  • 3 eggs, lightly whisked
  • 20.60 gm milk
  • 20.00 ml finely chopped chives
  • 20g butter
  • 4 wholemeal English muffins, split, toasted
  • 4 slices ham, torn
  • 4 slices tasty cheese
Instructions:
  • Combine eggs and milk in a large jug, whisk until well blended. Stir in chives and season with salt to taste.
  • Warm a small non-stick frying pan over medium-high heat. Add a knob of butter and swirl the pan until it foams.
  • Pour half of the mixture into the pan, allowing the egg to cover the base by tilting the pan. Use a wooden spoon to gently pull the cooked egg from the outer edges towards the center. Tilt the pan to ensure the uncooked egg reaches the base. Cook for 1-2 minutes or until the egg is just cooked through. Use a spatula to fold the omelette in half, then transfer to a plate. Repeat the process with the remaining egg in a separate batch. Finally, cut the omelettes in half before serving.
  • Assemble the muffins by placing the base on serving plates, then layering with omelette, ham, cheese, and topping with the remaining muffin half before serving.
