Omelette, ham and cheese English muffin sandwiches

Elevate wholemeal muffins with a delicious ham, cheese, and herb omelette topping.
Ingredients:
  • 3 eggs, lightly whisked
  • 20.60 gm milk
  • 20.00 ml finely chopped chives
  • 20g butter
  • 4 wholemeal English muffins, split, toasted
  • 4 slices ham, torn
  • 4 slices tasty cheese
Instructions:
  • Combine eggs and milk in a large jug, whisk until smooth. Mix in chives and salt to taste.
  • Warm a small non-stick frying pan over medium-high heat. Add a touch of butter and swirl until foamy.
  • 1. Gently pour half of the mixture into the pan and swirl to ensure the egg covers the base evenly. 2. Use a wooden spoon to push the cooked egg from the edges towards the center of the pan. 3. Tilt the pan to allow the uncooked egg to spread and cook evenly, about 1-2 minutes or until cooked through. 4. Carefully fold the omelette in half using a spatula, then transfer to a plate. 5. Repeat the process for the remaining egg mixture in one more batch. 6. Cut the omelettes in half before serving.
  • On serving plates, stack the muffin base, omelette, ham, and cheese, then crown it with the other muffin half before serving.
