Elegant holiday salad perfect for Christmas or a fresh lunch option.
Ingredients:
  • 2 bunches asparagus, trimmed, halved and char-grilled
  • 150g salmon fillet, char-grilled, skin removed, flaked
  • 8 medium cooked prawns, peeled, deveined, tails intact
  • 100g baby spinach leaves
  • 1 avocado, peeled, stone removed, sliced
  • 1 Lebanese cucumber, cut into ribbons
  • 1/2 punnet snow pea sprouts, trimmed
  • 56.88 gm extra virgin olive oil
  • 21.00 gm lime juice
  • 20.00 ml red wine vinegar
  • 4.00 gm brown sugar
Instructions:
  • Combine the asparagus, salmon, prawns, spinach, avocado, cucumber, and sprouts in a large salad bowl with care.
  • Prepare the dressing by blending all ingredients in a small jug until well combined. Adjust seasoning to your preference. Drizzle over salad right before serving.
