Seasonal greens and rich Asian flavors elevate this quick salmon stir-fry.
Ingredients:
  • 2 tsp Asia Sesame Oil
  • 4 Tasmanian Skinless Salmon Portions, cut into 2cm pieces
  • 1 red onion, cut into thin wedges
  • 2 bunches asparagus, woody ends trimmed, cut into 5cm lengths
  • 5cm-piece ginger, peeled, cut into matchsticks
  • 60ml oyster sauce
  • 51.60 gm black bean sauce
  • 40.00 ml Chinese cooking wine
  • 1 bunch baby bok choy, halved lengthways
  • 200g edamame or broad beans, thawed, peeled
Instructions:
  • In a wok or large frying pan, heat half of the oil over high heat. Add half of the salmon and stir-fry for 1-2 minutes until it turns light golden. Transfer to a heatproof bowl. Repeat with the rest of the salmon.
  • Pour the rest of the oil into the wok or pan. Toss in the onion, asparagus, and ginger, stir-fry for 2 mins until lightly browned. Place the salmon back into the wok or pan along with the oyster sauce, black bean sauce, and Chinese cooking wine. Let it come to a boil. Mix in the bok choy and edamame or broad beans, stir-fry for 1-2 mins until the bok choy wilts slightly.
  • Distribute the salmon mixture into individual serving bowls and season to taste.
