Indulge in asparagus ribbons with crispy prosciutto and golden breadcrumbs.
Ingredients:
  • 320g dried spaghettoni pasta
  • 60ml (1/4 cup) olive oil
  • 55g (3/4 cup) fresh sourdough breadcrumbs
  • 85g prosciutto slices, finely chopped
  • 2 garlic cloves, crushed
  • 1/4 tsp dried chilli flakes
  • 2 bunches asparagus, peeled into ribbons
  • 40g (1/2 cup) finely grated parmesan
  • 30.00 ml chopped fresh chives
  • 30.00 ml chopped fresh parsley
Instructions:
  • Boil pasta in salted water until perfectly cooked. Save 2 tablespoons of pasta water. Mix pasta and reserved liquid in the saucepan.
  • Heat 1 tablespoon of oil in a frying pan over medium-high heat until shimmering. Add breadcrumbs and cook for 2-3 minutes until they turn golden and crisp. Season with your favorite seasonings, then transfer the breadcrumbs to a bowl. Use a paper towel to wipe the pan clean.
  • In a skillet, heat the remaining tablespoon of oil over medium-high heat. Cook the prosciutto for 3 minutes until it turns golden and crispy. Add the garlic and chili flakes and cook for 1 minute until fragrant. Toss in the asparagus and cook for 2 minutes until it's tender-crisp.
  • Combine the prosciutto mixture, parmesan, chives, parsley, and remaining oil with the pasta. Toss well to mix everything together. Serve in bowls, sprinkle with breadcrumbs, and season with pepper.
