Asparagus and flat beans with parsley

Celebrate Spring with a vibrant asparagus and green bean salad.
Ingredients:
  • 2 bunches asparagus, ends trimmed
  • 320g flat beans, topped
  • 40.00 ml chopped fresh continental parsley
  • 9.20 gm extra virgin olive oil
  • Salt & ground black pepper, to taste
Instructions:
  • Blanch the asparagus in a pot of boiling water for 1-2 minutes until vibrant green and crisp-tender. Remove with a slotted spoon and place in a bowl, covering loosely with foil.
  • Bring the water back to a boil, then add the beans and cook uncovered for 2-3 minutes until they are vibrant green and tender-crisp. Drain using microwave tip 2.
  • Combine beans, parsley, and oil with asparagus, tossing until well mixed. Season with salt and pepper, then transfer to a serving platter.
