Whip up a delicious asparagus and mushroom frittata in no time for any meal - breakfast, brunch, or dinner!
Ingredients:
  • 1 serving cooking spray
  • 1 tablespoon olive oil, or as needed
  • 0.5 onion, chopped
  • 0.5 red bell pepper, diced
  • 4 button mushrooms, diced
  • 1 stalk fresh asparagus, trimmed and chopped
  • 6 egg whites
  • 2 eggs
  • 0.33333334326744 cup skim milk
  • 1 cup shredded Cheddar cheese
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and coat an 8-inch square baking dish with cooking spray.
  • In a skillet over medium heat, sauté onion, red bell pepper, mushrooms, and asparagus in olive oil until onion is translucent, about 5-10 minutes. Transfer the flavorful mixture to the baking dish.
  • Whisk egg whites, eggs, and skim milk until smooth, then pour over onion mixture. Top with Cheddar cheese.
  • Bake in the oven until the frittata is fully set in the center and a clean fork comes out, about 20-25 minutes.
