Create a vibrant teenage lunchbox with a delicious burger, grilled corn on the cob, and a refreshing berry yogurt.
Ingredients:
  • Beetroot dip, to serve
  • Celery sticks, to serve
  • Corn cobs, cooked, to serve
  • 200g beef mince
  • 2 garlic cloves, crushed
  • 1/2 zucchini, grated
  • 20.00 ml fresh flat-leaf parsley leaves, chopped
  • 62.50 ml dried breadcrumbs
  • 70.63 gm smokey barbecue sauce
  • 2 wholemeal damper rolls, split
  • 4 baby cos lettuce leaves
  • 40.00 ml tomato relish
  • 250.00 ml vanilla yoghurt
  • 50g raspberries
  • 50g blueberries
  • 20.00 ml coconut chips
Instructions:
  • Preheat oven to 200C/180C fan-forced and line a baking tray with sides with baking paper. In a bowl, mix together mince, garlic, zucchini, egg, Worcestershire sauce, parsley, breadcrumbs, and 1 tablespoon of barbecue sauce. Season with salt and pepper, then shape the mixture into a 6cm x 15cm log on the prepared tray. Bake for 30 minutes until cooked through. Let it cool, then slice into 6 pieces. Assemble sandwiches by layering lettuce, relish, meatloaf slices, and more barbecue sauce between roll bases and roll tops. Wrap in plastic wrap and refrigerate until ready to enjoy.
  • Portion the yoghurt into two 3/4-cup airtight containers. Add a colorful mix of raspberries, blueberries, and coconut chips on top. Seal containers with lids and chill until ready to serve.
  • Assemble sandwiches, fruit salad, beetroot dip, celery, and cooked corn in lunchboxes. Chill until ready to enjoy.
