Aussie crumpet burger

"Ultimate fusion: Beef, beetroot, and a sunny-side-up egg on a crumpet."
Ingredients:
  • 27.30 gm olive oil
  • 1 red onion, thinly sliced
  • 500g beef mince
  • 4 eggs
  • 8 Golden Crumpets, toasted
  • 4 baby cos lettuce leaves, torn
  • 1 tomato, thinly sliced
  • 100g cooked beetroot, thinly sliced
  • Tomato sauce, to serve
Instructions:
  • In a large frying pan over medium-high heat, heat 1 tablespoon of oil until sizzling. Cook the onion, stirring occasionally, for 7 minutes until golden brown. Season to taste and then set aside.
  • Divide the minced meat into 4 equal portions and form them into patties that match the width of the crumpets.
  • Sear the patties in the pan over medium-high heat, flipping after 2 minutes or once browned. Season generously. Lower the heat to medium and continue cooking for 4 more minutes or until fully cooked. Rest the patties, lightly covered with foil.
  • Heat the remaining 2 teaspoons of oil in a large frying pan over medium-high heat. Crack in 4 eggs and cook for 3 minutes until the whites are set.
  • Place a crumpet on each plate. Arrange lettuce, tomato, beetroot, patties, onion, and egg on top. Add a touch of tomato sauce if desired. Top with another crumpet. Secure each burger with a small toothpick.
