Australian corn and avocado dip with damper dippers

Celebrate Australia Day with our colorful dip and crispy damper dippers!
Ingredients:
  • 3 damper rolls
  • 2 large avocados, chopped
  • 42.00 gm fresh lime juice
  • 2 green shallots, thinly sliced
  • 62.50 ml fresh coriander leaves, chopped, plus whole leaves, extra, to serve
  • 310g can corn kernels, drained
  • 85g (1/4 cup) corn relish
Instructions:
  • 1. Preheat your oven to 180C/160C fan forced. Slice the damper rolls horizontally, then cut each half into 8 wedges. Arrange the wedges in a single layer on 2 baking trays and lightly spray them with oil. Bake for 10 minutes or until they are crisp and golden.
  • Mix ripe avocado, fresh lime juice, diced shallot, and chopped coriander in a bowl, then season with a pinch of salt. Serve in a decorative shallow bowl.
  • In a separate bowl, mix the corn kernels and corn relish. Spoon this mixture over the avocado blend. Top with pepitas and additional coriander leaves. Serve with lime wedges and the damper dippers.
